1996 Faiveley Clos de Cortons

We brought this with us to the Modern in NYC. Our first taste was with artic char tartar and egg in a jar with lobster and sea urchin foam. The food was dynamic and interesting, but the wine seemed too young. Clearly old school burgundy, with dirty,raw and almost stinky, like coming in from a day of gardening.. There are massive tannins and acids. It brands itself on the palate and doesn't let go. No one would mistake it for a California pinot. The next course of scallop and fois gras in sunchoke soup brings out a briny saline quality. Then duck and wild salmon and it sings. Given that it needs 90 minutes to start to strut its stuff, I'd hold off another few years before opening another bottle. Retail $150.
