The nitty-gritty details of how to make great French onion soup.
This is a classic recipe for French Onion Soup. I got it from my On Cooking textbook and made a few changes from how I've seen chefs treat the soup. It yields approximately four quarts of soup. You'll need: Patience. The onions will have to cook slowly - think of them relaxing at the beach (or your pot) and then coming back with a full...read more
2004 Kongsgaard Chardonnay

Pale golden. Bright lemon and toasted brioche. Very long and full. Outstanding balance and sheer power. Sleek. Unbelievable full mouthfeel. Pure and sweet. Very expensive. But worth it. One of the top 4 California Chardonnay producers, along with Aubert, Kistler, and Marcassin.

Burgundy is seeing some amazing returns at high end auction houses.

Like I said, people who collect at this level aren't too worried about how much gas has gone up whether that gas is going into an S-Class, a Chris Craft, or a Gulfstream. 2004 Dominio de Atauta Ribera del Duero Atalayas de Golban

Very dark and full. Outstanding concentration, structure and balance between dark, bursting fruits, tannins and acids. Would try to age a few more years- this would improve with complexity. Quite easy to drink now. Drank by itself, but would work with almost any food, except for the exceptionally mild.

From Gruyere cheese to caramelized onions... this article is here to enhance your french onion soup.
"Whaaaaah! Not another onion!" My poor little brain and eyes screamed as I slaved away in one of my internship sites. The onions were wet and released their potent fumes making my eyes tear near the point of temporary blindness, and my nose leaked like a stubborn faucet. There was a little wet spot on my right shoulder serving as a tissue for...read more
