Because the climate of Hawke's Bay is so varied depending upon where the grapes are being grown, any number of varieties seem to be able to succeed in this North Island wine region. In general, however, it is fairly cool, so Chardonnay does expectedly well here (as it does in that other famously cool-weather region in France, Burgundy). Cabernet Sauvignon also grows well here, and when it is blended, Bordeaux-style, with Cabernet Franc and Merlot, the results are often outstanding. Really, there are few classic varieties that won't grow here: Even that most famous of warm-weather-loving varieties, Syrah, has seen success in Hawke's Bay. Only time will tell how far this region will go. Its future looks bright indeed.
