Provence is best known for its dry rose wines. These wines, which have seen a significant upsurge in popularity in the United States in recent years, tend to be a bit of a revelation for those who have never before tried them before. Quite dry, pleasantly spicy, and just the slightest bit fruity, they are, in general, rather auster - nothing like the rich, mouth-filling pink wines many people tend to buy most often. But they are perfect for the warm days of spring and summer, offering complexity and refreshment while not being overwhelming. They're great when drunk on their own, but even better with the light fare most people enjoy in the warmer months.
