Verandah: Opening Grenada's Best New Restaurant

This week I started a new consulting project that will take the dining scene in Grenada to the next level. I recently joined forces with my friend Gary Birkett and we are opening Verandah, a new restaurant located in the Mount Cinnamon Resort which overlooks the beautiful Grand Anse Beach. Gary is the Executive Chef and I am the General Manager and Sommelier. The menu is based on the best seafood available including local favorites like Barracuda, Tuna, and Mahi-Mahi along with several carnivorous dishes of Pork, Lamb, Beef, and Chicken.

Verandah will offer a wide selection of appetizers and desserts along with a "Cutters Menu" (Caribbean Tapas) for those who prefer sampling a variety of flavors. The bar will feature a complete list of signature and classic cocktails and you can also build your own libation with one of our homemade spirit infusions. As for the wine list, I have composed a list of the best wines available on the island which I will tell you all about in the upcoming articles once I start tasting.

This is a very exciting and time consuming project for me and I plan to keep you updated on all of our progress. The restaurant will officially open on August 1, and everyday we are closer to getting everything in place. Gary and I spent all week tracking down suppliers and composing recipes for our menus. You would not believe the variety of fruits and vegetables available from local farmers -- the flavor potentials are endless. For those of you who are interested in Caribbean cuisine and wine pairings stay tuned for more updates on how the Verandah evolves into Grenada's best new restaurant.
