Champagne is traditionally made from a blend of chardonnay, pinot noir, and pinot meunier. However, there are certain instances when the winemaker decides to produce a bottle of bubbly only from red grapes. These are referred to as blanc-de-noirs. Literally, it translates to "white of blacks," or a white wine (in this case, sparkling) made only from dark-skinned grapes. This is accomplished by pressing the grapes and then immediately separating the juice (which is clear) from the skins (from which all color comes).
