Caesar Salad

The rule of thumb when pairing a wine with a salad is that you don't want to have an overly acidic wine with a bright and tangy vinaigrette. However, because of the creamy nature of the classic Caesar dressing, you have a lot more leeway when it comes to finding the right wine to go with it. California- or Australia-style Chardonnay is excellentit has a creaminess of its own that echoes the dressing beautifully. Sauvignon Blanc is also delicious, as its green flavors find a nice pair in the romaine used in the traditional salad. The addition of anchovies complicates things, but don't be afraid: A nice Orvieto or Greco di Tufo will make easy work of themif you can find them at your local wine shop.
