Chocolate

Chocolate is difficult to pair with wine. In fact, if you're not careful, you may find that both the chocolate and the wine are ruined by a bad pairing. There are, however, three wines that are very good with chocolate. Cabernet Sauvignon is a nice compliment to chocolate, though it's a black and white sort of proposition: People either love it or hate it. Port is wonderful with dark chocolate, especially if it's nice and bitter, which is countered very well by the sweetness of the wine. And, finally, there is Brachetto d'Acqui, the fizzy, reddish-pink wine from Italy's Piedmont region. It is sweet enough to stand up to the chocolate, but not so sweet that it becomes cloying. There is probably no better pairing partner for chocolate than this wine. And Banfi makes one called Rosa Regale that is less than $15 and absolutely wonderful either with food or on its own.
