Cured Ham

Cured ham might seem like an unlikely food to try to pair with a wine, but the truth is that it can be a wonderful partner for the right one. The trick here is to make sure that any sweetness in the ham itself does not overpower the wine. In order to prevent this, you have two options: Either go with a wine that has a good bit of fruitiness itself (a good Beaujolais is excellent), or have a wine that counters the sweetness in the ham with acid and bubbles. So though it may seem like a high-end – low-end sort of pairing, pink sparkling wine is wonderful with it, especially if the red fruits of the Pinot Noir in there are a bit more prominent.
