The tomato sauce and the ricotta-cheese filling are the keys to the success of this pairing. Fortunately, it's not terribly difficult to find a wine that goes well with the cheese, and the quintessential Italian wineChianticomes to the rescue yet again. Just make sure you get a decent onethere's still a fair amount of mediocre Chianti out there. Any Classico or Riserva, though, should be just fine. You'll also do well with a Valpolicella or a Montepulciano d'Abruzzo, and these might be even better choices than Chianti if for no other reason than most people aren't terribly familiar with them. And learning about new wines, especially in the context of pairing them with food, is always a good thing.
