Depending upon how the pork chops are prepared, your wine options are rather broad here. If the chop is grilled, a good, earthy Pinot Noir will pair nicely with the charred parts of the meat, which will in turn bring out the fruity sweetness of the wine. If the chop is baked, a white wine like a Pinot Gris, especially a nicely acidic one, is just the right wine for it. And if your pork chop is being served with a bold accompaniment like a fruit compote, then try to pair the wine with that as opposed to the meat.
