There's just one word you need to know when it comes to pairing potato chips with wine: Champagne. This, of course, may seem counterintuitive: The worlds most luxurious wine paired with one of the most basic snack foods may seem a bit odd at first. But think about it: The starchy, oily richness of a well-made potato chip provides the bubbly with the perfect blank canvas upon which to strut its stuff. The oil will tame the acidity of the wine, the bubbles will cut through the fat of the chip, and the salt will set all the flavors of the Champagne off in sharp relief. After all, the classic pairing partner for Champagne is caviar and blinis, which aren't all that different in flavor profile from potato chips. It's simple mathematics: Salt plus starch plus bubbly equals one delicious combination.
