Thai cuisine is based on varying the balance between saltiness, bitterness, sourness, and sweetness. So when it comes to pairing wines with Thai dishes, the key is to consider how this balance is manifested in whatever it is you're eating. Sweet and off-dry wines are the classic pairing partners for Thai food, especially since they counteract the heat of peppers and chilies so well. But don't avoid dry wines just because you've heard they're no good with Thai food. Semillon-Sauvignon Blanc blends from the land down under are gorgeous with Thai food, their fruity richness pairing wonderfully with many Thai dishes. And softer, less tannic red wines are also tasty, and though not nearly as popular. Some California-style Merlots would certainly work well here. Just keep an open mind... the possibilities with Thai food are broader than you might imagine.
