Vegetable Dip

Vegetable dip is one of the more difficult items with which to pair wine. This, of course, only makes sense: Veggies are notoriously tricky to pair wine with. A dip, however, might make things a bit easier: The fatwhether it's sour cream, cream cheese, or mayonnaisethat forms the base of the dip itself can often provide the bridge between the veggies and the wine. Which means one thing: Bubbly. But not necessarily Champagne: It doesn't make a whole lot of sense to open an expensive bottle of wine if the pairing wont be all that terrific anyway. Instead, try a Prosecco or a Cava, both of which should pair nicely with the dip, and will not break the proverbial bank. You can also go with Sauvignon Blanc, whose natural grass or asparagus flavors will work well, too.
