Wine and cheese may be the most common pairing out there today. The problem, unfortunately, is that most wine and cheese pairings are simply not any good. And unless they are made with care and consideration, both the wine and the cheese will suffer from it. Dairy, indeed, provides some rather serious problems with it comes to wine-pairing. The mouth-coating texture of a cream sauce, the saltiness of a cheese, the fillings of an omelet - all of these make generalizations about appropriate pairings not only difficult, but sometimes just plain impossible - unless we deal in specifics.
